Recipe – Millet Pilaf with Vegetables
**Ingredients:**
– 1 cup millet
– 2 cups vegetable or chicken broth
– 1 tablespoon olive oil or butter
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 carrot, diced
– 1 bell pepper (any color), diced
– 1 zucchini, diced
– 1 teaspoon dried herbs (such as thyme or oregano)
– Salt and pepper to taste
– Fresh parsley or cilantro for garnish
**Instructions:**
- Rinse the millet under cold water using a fine mesh strainer.
- In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced carrots, bell pepper, and zucchini to the skillet. Cook for another 5 minutes, stirring occasionally.
- Add the rinsed millet to the skillet and toast it for 1-2 minutes, stirring constantly.
- Pour in the vegetable or chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the millet is tender and has absorbed the liquid.
- Fluff the millet pilaf with a fork and season with dried herbs, salt, and pepper.
- Garnish with fresh parsley or cilantro before serving.
