Millet Pilaf with Vegetables

Recipe – Millet Pilaf with Vegetables

**Ingredients:**

– 1 cup millet

– 2 cups vegetable or chicken broth

– 1 tablespoon olive oil or butter

– 1 onion, finely chopped

– 2 cloves garlic, minced

– 1 carrot, diced

– 1 bell pepper (any color), diced

– 1 zucchini, diced

– 1 teaspoon dried herbs (such as thyme or oregano)

– Salt and pepper to taste

– Fresh parsley or cilantro for garnish

**Instructions:**

  1. Rinse the millet under cold water using a fine mesh strainer.
  2. In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the diced carrots, bell pepper, and zucchini to the skillet. Cook for another 5 minutes, stirring occasionally.
  4. Add the rinsed millet to the skillet and toast it for 1-2 minutes, stirring constantly.
  5. Pour in the vegetable or chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the millet is tender and has absorbed the liquid.
  6. Fluff the millet pilaf with a fork and season with dried herbs, salt, and pepper.
  7. Garnish with fresh parsley or cilantro before serving.
